Whole Wheat Bread Machine Bread
1 1/2 Cups Whole Wheat Flour
1 1/2 Cups All Purpose Flour
1 1/2 Tbsp. Sugar
2 1/4 Tsp. Yeast
3/4 Tsp. Salt
1/8 Cup Vegetable Oil
1 Cup Warm Water

Add water and oil to your bread machine followed by the remaining ingredients.  Follow your bread machines instructions for regular or wheat bread.

Lemon Chicken with Carrots
Try this excellent crockpot recipe and serve it over hot rice. 
Prep Time: 25 minutes 
Cook Time: 7 hours, 30 minutes

Ingredients:

  • 1/3 cup flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 6 boneless, skinless chicken thighs, cut into 1" pieces
  • 2 Tbsp. vegetable oil
  • 1 onion, chopped
  • 2 Medium carrots, sliced
  • 1 Tbsp. balsamic vinegar
  • 1/3 cup ketchup
  • 1/2 cup water
  • 3 Tbsp. brown sugar
  • 3 Tbsp. lemon juice
  • 6 oz. can frozen lemonade concentrate, thawed
  • 2 Tbsp. cornstarch
  • 3 Tbsp. water

Preparation: 

Mix flour with salt and pepper in paper bag or shallow dish. Coat chicken pieces in this mixture. Shake off excess and brown in oil in a nonstick skillet over medium high heat. Remove chicken and place on top of onion and carrots in your crockpot. 

Mix the vinegar, ketchup, water, brown sugar, lemon juice, and lemonade concentrate in small bowl and pour into the skillet. Cook and stir, scraping to remove browned bits, until mixture comes to a boil. Pour sauce over chicken in crockpot. Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours. When ready to serve, combine cornstarch and water in small bowl, mix well and stir into the sauce. Cook on HIGH for 20-30 minutes until thickened. Serve with hot rice. 5 servings 





Nacho Chili
This is a family favorite and easy to cook in the crock pot.
Prep Time: 10 mins
Cook Time:  6 hours on low or 3 hours on high
Ingredients:
1pd ground beef
1 cloved garlic, minced
1 cup onion, diced
1 can Progresso Hearty Tomato Soup
Or 1 can diced tomatoes and 1 can vegetable juice or tomato sauce
1 small can diced green chiles
1 package taco seasoning
1 can chili beans or kidney beans
1 cup frozen corn
Toppings:
Cheese
Sour cream
Corn Chips
Directions:
Brown ground beef, onions and garlic. Drain grease and add to crock pot. Add the rest of the ingredients, except the corn. Mix together and cook for 3 hours on high or 6 hours on low.  During the last 30 minutes of cook time add the corn and mix together. Serve with toppings and enjoy.
